MUTTON BIRYANI


Ingredients


Basmati Rice             1kg
Mutton                        1kg
Oil                                 250ml 
Onions                          4 medium size
Tomatoes                     3 medium size
Green chillies                5
Curd                               500ml
Ginger garlic paste       3 tbsp
Turmeric powder           1/2tsp
Ghee                               2tbsp
Mint leaves                    1 cup
Coriander leaves            1/2 cup
Garam Masala powder   2tsp
Bay leaves                       2
cardomoms                       3
cloves                               4
cinnamom stick                1 inch piece
 Shah zeera                       1 /2 tsp
Lemons                             3 
Orange colour or
   Saffron              
Milk                                   1/2 cup




Method
1.Marinate mutton in curd ,along with slit green chillies,salt,turmeric powder,1tbsp of ginger garlic paste and few mint leaves for about 30 minutes.
2.Heat oil in a pressure cooker and fry thinly sliced onions until they are golden brown in colour.Remove with a slotted spoon into a plate and then fry mint leaves and then chopped tomatoes .Keep them aside
 And in the same oil add bay leaves, cardomoms.cloves and cinnamon.Fry and add the remaining i ginger garlic paste and fry well till the raw flavor is gone and now add the marinated mutton .Mix well and pressure cook for 10 -15 minutes.
3.Meanwhile wash and soak rice in a bowl.Heat about 8-9 glasses of water in a large pan. Add salt and shah zeera to the  water. When the water starts boiling  add rice and cook the rice ,stirring it in between.When the rice is almost done(90% done ) drain and keep aside.
4.Now open the cooker lid and cook the mutton without covering till the water is dried.Remove from the heat and add lemon juice,fried tomatoes,fried pudina and half of fried onions  . Keep aside the remaining fried onions for garnishing.Also add chopped coriander leaves and    garam masala powder.
5. Soak saffron or colour in milk and keep aside.
6.Take a  large dish  and  put a layer of rice at the bottom,sprinkle some saffron dissolved milk on it,and spread half the quantity of cooked mutton on it.Spread another layer of rice followed by mutton finally spread the remaining rice.Sprinkle  saffron or colour dissolved milk and fried onions.Spread 2 tbsp of ghee on on the top.Cover with a  tight lid and cook on low heat for 10- 15 minutes, till nice steam has formed .
7.Mix only before serving .Serve with raita, mirchi ka salan or dalcha or bagara baingan.
