DATES
Dates are rich in iron and are popular energy boosters and are easily digested.Here are few recipes using dates.
Date Pudding
Ingredients
Chopped dates 1 1/2 cups
milk 3 cups
eggs 2
cornflour 2 tbsp
sugar 4 tbsp
vanilla essence 1tsp
Method
1.Beat eggs along with sugar and vanilla essence.
2Add milk,cornflour and chopped dates .Mix well.
3.Pour in a greased baking dish.
4.Bake in a pre heated oven till th etop is browned.
5.Serve hot or cold.
Stuffed Dates
Ingredients
Dates 10
Sugar 1 tbsp
Chopped nuts 1tbsp
Method
1.Slit dates
2.Mix sugar and chopped nuts
3.Stuff this in the dates
4.Serve chilled.
Date chutney
Ingredients
Dates 1 cup(seedless)
Kashmiri chillies 2-3
Garlic flakes 2
Tamrind 1tsp
Jaggery 1tbsp
Salt to taste
Method
1.Soak chopped dates and kashmiri chillies in a cup of hot water for 10 minutes.
2.Put soaked dates and chillies along with all other ingredients in a mixer jar and blend .
3.Remove and serve.
Date Raitha
Ingredients
Dates 8-10
Curd 1 cup
Jeera powder 1/4 tsp
Chilli powder 1/2 tsp
Coriander leaves 1/2 tbsp
Chopped onions 1 tbsp
Salt to taste
Method
1.Chop dates finely.
2.In a mixing bowl put all ingredients and mix well.
3.Serve chilled with any type of pulaos and fried rice.
Date Kheer
Ingredients
Dates 10-12
Milk 3 cups
Rice flour 3 tbsp
Sugar 4 tbsp
Chopped cashewnuts 1tbsp
Raisins 1tbsp
Ghee 1tbsp
Cardomom powder 1/4tsp
Method
1.Mix milk and chopped dates in a pan and boil till dated are soft .
2.Add chopped nuts and raisins and sugar.
3.Mix rice flour with little water and add to the boiling milk.
4.Stir for a while.
5. Add ghee and cardomom powder.
6.Serve hot or cold.
Date Biscuits
Ingredients
Chopped dates 1 1/2 cups
Maida 1 cup
Rava 1 tbsp
Egg !
Butter 1/2cup
Sugar 1/4 cup
Vanilla essence 1/2 tsp
Method
1.In a bowl mix butter, sugar and cream well.
2.Add beaten egg and rava.
3.Add maida and chopped dates and vanilla essence.
4.Pour in baking tray and bake tilll top is browned.
5.Cut into squares when cool.
