MUTTON BIRYANI Ingredients Basmati Rice             1kg Mutton                        1kg Oil                                 250ml  Onions                          4 medium size Tomatoes                     3 medium size Green chillies                5 Curd                               500ml Ginger garlic paste       3 tbsp Turmeric powder           1/2tsp Ghee                               2tbsp Mint leaves                    1 cup Coriander leaves            1/2 cup Garam Masala powder   2tsp Bay leaves                       2 cardomoms                       3 cloves                               4 cinnamom stick                1 inch piece  Shah zeera                       1 /2 tsp Lemons                             3  Orange colour or    Saffron               Milk                                   1/2 cup Method 1.Marinate mutton in curd ,along with slit green chillies,salt,turmeric powder,1tbsp of ginger garlic paste and few mint leaves for about 30

CARROT CURRY Ingredients Carrots     1/4 kg Onion        1 medium size Green chillies  3 Oil              1tbsp Redchilli powder  1/2tsp Turmeric powder  1/4tsp Salt  Chana dal      1tsp Urad dal     1tsp Mustard seeds     1/4tsp Cumin  seeds           1/4 tsp Curry leaves Coriander leaves Method 1 Finely chop peeled carrots.Add about a cup of water and little salt ,cover with a lid an cook. When the  carrots are  tender remove from fire and drain the water. 2 Heat oil  in a frying pan ,  add chana dal and urad dal fry  and add mustard seed and cumin seeds. When they start crakling add curry leaves ,chopped onions and green chillies. 3.Add boiled carrot,salt turmeric and  red chilli powder.Fry for few minutes and add chopped coriander leaves.Can also add grated coconut at this stage.Mix well and fry for 2 minutes and serve with rice or chapati.

BAGARA CHAWAL Ingredients Basmati rice                         500gms Onion                                    1 Green chillies                         3 Tomatoes                              2 Mint leaves                            1/2 cup Ginger Garlic paste                 2Tbsp Coriander powder                  1tsp Cloves                                    2 Cardomoms                            2 Cinnamom                              1 inch stick Bay leaves                              2 Salt Garam masala powder            1 tsp Coriander leaves chopped      1tbsp Oil                                          1/2 cup Ghee                                        2 tbsp Method 1.Heat oil and ghee in a dish.Add bay leaves,cloves,cardomom and cinnamon. Vermicelli  Delight Ingredients Vermicelli                   1 cup Sugar                          2 cups Koya                          50gms Ghee                           50ml Cardomom pow der     1tsp  Chopped nuts orange food colour      a pinch Method 1 Mix a cup of water to the sugar in a pan and bring it to boil and make thick syrup(3 thread consistency). 2.In another pan heat the ghee and fry the chopped nuts and keep aside. 3.In the same ghee add vermicelli and fry till golden brown. 4.Take one and half cup of water and bring to boil and and add roasted vermicelli.Switch off when the water dries up. 5.Add khoya ,food colour.and boiled vermicelli to the sugar syrup ,mix well and simmer for few minutes.Sprinkle the chopped nuts on the top and switch off. 6. Cover and keep aside for an hour so that the syrup is well absorbed. 7.Serve warm.

PRAWN MASALA WITH SPRING ONIONS Ingredients Prawns                             250gms Onions                              2 medium size Spring onions chopped       1/2 cup Green chillies                       2-3 Haldi                                    1/2 tsp Red chilli powder                  1 tsp Salt  to taste Ginger garlic paste                1tsp Coriander powder                 1tsp Tomato                                   1 Coconut paste                         1tbsp Coriander leaves                        Graram masala powder            1tsp Oil                                           1tbsp Method 1.Take finely chopped onions and chopped spring onions in a pan ,dd prawns,ginger garlic paste,Red chilli powder, haldi and salt.Mix well and add little water ,about 1/2 cup. CHICKEN MANCHURIA INGREDIENTS boneless chicken - 250gms cornflour - 2 tbsp maida - 2tbsp ajinomoto - a pinch pepper - 1 tbsp salt egg - 1 soya sauce - 2tbsp green chilli sauce - 2 tbsp tomato sauce - 2 tbsp vinegar - 1tbsp METHOD 1.add cornflour, maida, salt, pepper, soya sauce and egg and make a batter 2.add chicken pieces and deep fry until brown. 3.in another pan take 2 tbsp oil, fry chopped onions, chopped garlic and chillies 4.add tomato sauce, soya sauce, green chilli sauce and venigar. 5. make cornflour paste with water and add salt and pepper 6.add fried chicken pieces.cook for few minutes and serve hot.

Tangdi Kabab Ingredients:- chicken legs                 4 cornflour                     1tbsp egg                              1 ginger garlic paste       2tsp garammaasla powder  1tsp salt red chilli powder          1tbsp lemon juice                   1tbsp pepper                           1tsp METHOD:- 1.wash chicken pieces and make slits on it with knife. 2.marinate with salt  and lemon juice for half an hour. 3.mix egg,cornflour,ginger garlic paste,red chilli powder,garam masala powder,pepper and apply it on chicken leg piece and marinate for about 2 hours. 4.heat oil fr deep frying.Before frying sprinkle cornflour over the leg pieces and deep fry. 5.garnish with onion rings and serve hot.
