Chicken Cutlets

Ingredients chicken mince               250 gms onions medium size       2 boiled potatoes              2 green chillies                4-5 ginger garlic paste        2tsp turmeric powder            1/2 tsp red chilli powder            2 tsp coriander powder           1tsp chaat masala                  1tsp garam masala powder    1tsp eggs                                2 bread crumps salt mint leaves corianderleaves7 oil  Method 1.Heat oil in a pan .Add finely chopped onions and saute for a few minutes.add chopped green chillies and ginger garlic paste Fry for a while and add chicken mince. 2. Add salt,turmeric powder, red chilli powde and coriander powder. Mix well and cover  with a lid and cook till the chicken is done.If necessary you can add water. 3.Take two eggs and separate the white from the yolk and add the yolk to the above mixture and cook for few minutes till the egg is done. PLANTAIN CHIPS ( ARATIKAI CHIPS)

  . Ingredients Plaintain      1 Oil Red chilli powder   1/2tsp Salt to taste . Method 1. Peel and wash the plaintain and slice them finely. 2. Heat oil for deep frying. 3.Fry the chips till light brown in colour. 4.Remove the chips with a slotted spoon and sprinkle with salt and red chilli powder. 5.Mix well and serve.

GRILL CHICKEN

INGREDIENTS chicken pieces                  - 500 gms lemon                                - 1 no salt red chilli powder              - 2 tsp garam masala powder     - 1 tsp ginger garlic paste            - 1 tsp curd                                    - 2tbsp red colour (optional) chat masala powder METHOD :- 1. In a bowl mix chicken, lemon juice, salt, red chilli powder, garam masala powder, ginger garlic paste and marinate for 1/2 an hour. 2. Add curd and red colour and marinate in fridge for 2 hour 3. Place the chicken piece on rack and brush with oil in microwave for 5 minutes in 3rd combination, turn the pieces, brush more oil and then put it for 5 more minutes. 4. Grill for 20-25 min, turning in between. 5. arrange in a plate, sprinkle chat masala powder and garnish with onion slices and corriander leaves.

TOMATO DAL Ingredients:- Tur dal               -1 cup tomatoes            -3-4 chopped green chillies      -2 chopped onion                   - 1 small tamrind pulp       - 1 tbsp red chilli powder -2 tsp coriander leaves For tempering cumin seeds       -1/4 tsp mustard seeds  -   1/4 tsp whole red chillie-2 curry leaves  chopped garlic   -1 tbsp oil                       -2tbsp    METHOD:- 1. Wash dal and soak in water for half an hour. 2. Add tomatoes,green chillies,onions,red chilli powder,haldi,tamrind pulp to the soaked dal. 3.Pressure cook for 3-4whistles or till dal is cooked.Mash with a spoon,mix well and add salt. 4.In a pan add oil and the ingredients for tempering,add dal and simmer for few minutes.Add chopped coriander leaves and serve with rice.

GINGER CHUTNEY INGREDIENTS Ginger              1/2 kgs Jaggery            1/2kgs Tamrind            1/2kgs Red chillies       1/4 kgs Oil                      1/4kgs Garlic                 2pods Mustard seeds   1tsp Urad dal              1tsp Curry leaves       10-15 Salt to taste METHOD 1. Wash ginger,remove skin and chop into small pieces.Shallow fry in enough oil. 2.Fry red chillie.Add  little hot water to tamrind and extract thick pulp. 3.Grind red chillies to a fine powder and add tamrind pulp and ginger pieces.Grind to fine paste 4.Add jaggery and salt and grind further.  5.Heat oil in a pan add mustard seeds and urad dal and fry till they crackle add curry leaves and crushed garlic ,fry  ,and add to the chutney. 6.Store in clean bottles and refrigerate.
