CAULIFLOWER CARROT PICKLE

INGREDIENTS Cauliflower florets              1 cup Chopped carrot                   1 cup Red Chilli powder                1 cup Mustard seed powder         1/4th cup Fenugreek seed powder      1 tbsp Chopped garlic                    3 tbsp Salt                                        3 tbsp lemon                                   4 medium size FOR TEMPERING  Mustard seed               1 tsp Zeera                           1 tsp Curry leaves                few Whole Red Chilli         3 Garlic cloves                5 Oil                                1 cup METHOD 1. MUTTON FRY

    INGREDIENTS Mutton                          1/2 kg Onion                            1 no Green chillies                2 Curds                            ! cup Tomatoes                      2 medium size Red chilli powder         1 tsp Turmeric powder           1/4 tsp Coriander powder          1tsp Garam masala powder    1/2 tsp Coconut paste                ! tbsp Lemon  juice   Ginger garlic paste         2 tsp                 Salt   Oil  METHOD 1.Wash mutton and put it in a pressure cooker.Add ginger garlic paste turmeric powder,red chilli powder, and salt . Mix well. 2. Add chopped onions, slit green chillies,chopped tomatoes and curds and mix well. 3. Also add coriander powder,garam masala powder, coconout paste, chopped coriander leaves and juice of two lemons.Mix well . 4. Close the lid and pressure cook for 4 to 5  whistles or till motton is cooked.No need to add water. 5. Let  the cooker cool down and then open it .Switch on

INGREDIENTS Besan                            2 cups Rice Flour                     1 cup Red Chilli Powder         2 tsp Ajwain                            1tsp Sesame seeds                  2 tsp Ghee                               2 tbsp Salt  to taste Oil for deep frying METHOD 1. Mix besan and rice flour in a bowl.Add salt ,red chilli powder,ajwain and sesamme seeds and mix well. 2. Heat ghee in a pan and add to the flour.Mix well. Add water gradually and mix to make a dough. 3.Heat oil in a pan for deep frying . 4.Put the dough in sev presser and make murukku in hot oil . 5 Fry till they turn light brown or till the oil ceases bubbling. 6.Drain and cool and then store in air tight container.

Dates cake Ingredients Eggs                    4 Maida                 200gms or 2 cups Sugar                   11/2 cups oil                          1/2  cup Dates puree          1 cup Baking powder      1tsp baking soda            1/2 tsp milk                        1/2 cup vanilla essance        few dgs rops      Method 1. Sieve maida with baking powder and baking soda  two to three times. 3.In a mixing bowl break eggs and add sugar and beat well till the sugar dissolves,You can also use powdered sugar. 4. CHANA CHAT (YELLOW DRIED PEAS)

INGREDIENTS Yellow dried peas - 1/2 cup Tomato finely chopped- 1/2 Onion finely chopped Cumin seeds- 1/2 tsp Green chilly finely chopped -1 Ginger finely chopped- 1/2 inch Red chilly powder - 1/2 tsp Tamarind pulp -1 tbsp Salt to taste Coriander leaves finely chopped Chat masala - 2 tsp Chilly sauce - 1 tsp Lime juice- 1tsp Oil 1 tsp METHOD ->Soak yellow dried peas (chana) for about 7-8 hours in water. ->Add pinch of salt and turmeric and pressure cook soaked peas for 3-4 whistles ->Now heat oil in a pan and add cumin seed, when they crackle add tomato and saute them till the tomatoes are soft. ->Now add red chilly powder, chopped ginger and green chilies and stir them for few sec.  ->Add boiled peas and then add tamarind pulp and some water and simmer it for few min till you get boil ->Add chilly sauce, chat masala, salt and mix it well. ->cook till all the water gets dried up. ->Take it in a plate for garnishing, add chopped onions, c

CORN PAKODA

INGREDIENTS Corn kernels- 1 cup Cumin seeds 2 tsp Green chilly finely chopped - 1 Ginger finely chopped - 1 inch Finely chopped onion -1/2 cup Finely chopped coriander leaves Salt to taste Cornflour - 1 tbsp Rice flour - 1 tbsp Oil for deep frying METHOD ->Add corn kernels, cumin seeds, chopped green chilly, ginger to grinder and grind it to coarse mixture. -> Now to the paste add finely chopped onions,coriander leaves, salt, cornflour and rice flour and mix well. ->Make sure that the mixture is thick, else add more flour to adjust the thickness. -> Heat oil in a pan for deep frying the pakodas -> When the oil is hot drop in the pakodas either with spoon or with hand, fry them till golden brown and take them out in a paper towel, so that it absorbs excess oil. serve hot with tomato ketchup

CHINESE MAGGIE NOODLES

INGREDIENTS Maggie- 1 packet Onions finely chopped Carrots, beans and other veggies as per your choice finely chopped Salt to taste Ginger finely chopped- 1 tsp Garlic finely chopped- 1 tsp Red chilly powder- 1/2 tsp Green chilly sauce- 1 tsp Tomato ketchup- 2 tsp Soy sauce- 1/2 tsp Maggie taste maker Vinegar- 1 tsp Oil - 2tbsp METHOD -> Heat oil in a pan, add ginger, garlic and onions, saute them till translucent. ->Add salt and red chilly powder, stir for few sec, add veggies and stir them in high flame for 3 min. ->Meanwhile boil water in another pan with 1 tsp oil, once the water is in boiling stage add Maggie noodles till they are soft and drain all the excess water. -> In a bowl add all the sauces and the taste maker mix them well. -> After the veggies are soft and cooked, lower the flame and add the sauce mixture with very little water to avoid burning, mix them well add boiled noodles and toss them properly.       serve them hot :)

KALIJI FRY (LAMB LIVER FRY)

INGREDIENTS Lamb liver 300 gms Curd one cup Ginger garlic paste-1 tbsp Turmeric-1/4 tsp Red chilly powder-1/2 tsp 1 onion sliced 1 green chilli Coriander powder-1/2 tsp Garam masala powder- 1/2 tsp Coriander leaves (few) Mint leaves (few) Oil 2 tbsp METHOD -> Marinated liver with curd, ginger garlic paste, turmeric, red chilly powder,       corriander  powder, coriander leaves , mint leaves and garam masala for about 15 min. -> Now pressure cook the marinated stuff along with sliced onions and green chilly for     4- 5 whistles till liver gets soft . -> Open the pressure cooker and dry all the water that is present.  -> Add 2 tbsp of oil and stir it well for 3-4 min.  -> Add coriander leaves and stir it well.      serve hot with rice 

FISH FINGERS

Ingredients Bone less fish                  500gms Corn flour                            50 gms Maida                                  25 gms Egg                                       1 Ginger garlic paste                 1tsp Chilli Sauce                           1 tsp Red chilli powder                   1tsp Pepper                                   1tsp Red orange colour                  a pinch Lemon juice                           1 tbsp Salt to taste Oil for frying coriander leaves METHOD 1.Take bone less fish and cut it into thin long pieces.Add salt and lemon juice and marinate for fifteen minutes. 2. Now add ginger garlic paste,chilli sause , red chilli powder,pepper, red orange colour,beaten egg,maida and corn flour.Mix well and marinate for at least half an hour. 3. Heat oil in a pan and deep fry till golden brown.Garnish with coriander leaves and serve hot.

KHEEMA TIKKI

Ingredients Kheema  (mutton mince)          250gms Potatoes                                   250gms Onions  big size                                  1 Tomatoes                                           2 Green chillies                                      3 Ginger Garlic paste                       1tsp Red chillie powder                        1tsp Garam Masala powder                 1/2 tsp Lemon                                         1 Salt Oil for frying Coriander leaves                        1tbsp METHOD 1.Take mutton mince in a pressure cooker .Add salt,red chilli powder,turmeric powder and just little water and pressure cook for 2-3 whistles or till the kheema is cooked. 2.Boil potatoes and remove the peel and mash well. 3.Heat  little oil in a pan  and saute the chopped onions.Then add chopped green chillies and ginger garlic paste.Fry for a couple of minutes and add chopped tomatoes . 4. KOTHIMBIR VADI

INGREDIENTS 1 cup besan 1/4 tsp mustard seeds 1/2 tsp ajwain 1/4 tsp hing pinch of turmeric powder 1/2 tsp garlic paste  1/2 tsp ginger paste 1 green chilli crushed coriander leaves chopped METHOD -> Take one cup besan in a bowl, add water and stir it to fine paste without lumps. -> Take 2 1tbsp of oil in a pan and add mustard seeds,ajwain,garlic paste,      ginger paste, crushed green chilli, hing,turmeric powder. stir it well. -> Add besan paste to the pan and stir it to avoid over cooking, add little oil and      make it into smooth dough. -> Add chopped coriander leaves to the dough. ->Now line a plate with oil and spread the dough evenly and allow it to cool for     about  30 min. -> Now the dough is hard. cut them into small pieces and deep fry till golden  brown.      serve it with tomato ketchup :)

POTATO EGG CURRY

Ingredients Boiled eggs           3 Boiled potatoes     2 Onion chopped      1 Green chillies          2 Tomato puree         1 cup Ginger garlic paste   1tsp Turmeric powder     1/2 tsp Red chilli powder     1 tsp Coriander powder    1tsp Kasoori methi           1tsp Salt Oil                           1tbsp Method 1 Heat oil in a pan and add chopped onions and chopped green chillies .Saute few minutes and add ginger garlic paste and fry till the raw smell is gone. 2 Add coriander powder,red chilli powder  and turmeric powder and fry for few minutes .Add peeled and cubed potatoes and boiled eggs and mix  well. 3Add tomato puree and salt and cook for few minutes .Add  water and adjust according to the required consistency.Add kasoori methi and simmer till the gravy thickens.
